Recipe: School Dinner Dessert Recipe - Cornflake Tart

I'm feeling very old school today and decided to have a go at making a Cornflake Tart, something I haven't had since my school days back in the 90s! Anyone else agree that this was the BEST school dinner dessert?!


Ingredients: 
Sweet pastry case 
110g Cornflakes 
200g strawberry jam
140g golden syrup
40g Demerara sugar 
70g margarine


Method: 
1. Melt the butter, golden syrup and sugar in a pan and warm on a low heat, constantly stirring until all the sugar has melted 

2. Tip in the cornflakes and stir until they're all completely coated in the mixture 

3. Take off the heat and warm up the jam in a separate pan. Don't let it get too hot, take it off the heat once it's pourable 


4. Pour the jam over a sweet pastry case, spreading it with a knife to create a flat base

5. Pour the cornflake mixture into the case on top of the jam, and spread evenly 

6. Put in the oven at 200 degrees for 5-10 minutes. Be careful not to let it burn, you're basically just warming the pastry up 

7. Leave to cool and then enjoy with some custard or simply a cup of tea!
